Porterhouse Steak vs T-Bone Steak

And this is not the steak you can buy at any grocery store either. You need to go to the butcher or make a special order. Do not grab just any steak in your local brick and mortar, you are bound to be disappointed by the piece of charred rubber you’ll have as a result.
US Prime steak is undoubtedly the best porterhouse steak. It is also quite pricey. US Prime steak has exquisite marbling that guarantees a juicy, tasty steak every time. Ultimately, many people (myself included), are not comfortable spending that much on steak.
Marbling is the marble-like fat patterns that form on premium steak. These fat streaks melt during grilling to give the steak a tender juicy disposition.
Second in line is the Choice steak. This is fairly quality beef that is also reasonably priced. Most people find this quality quite acceptable thanks to the decent marbling.
The final and most basic type of steak is Select. This is typically the grade that is found in your local grocery store. you will barely find any marbling on this steak so it will likely end up tough and dry.

How to Prepare the Porterhouse Steak Before Grilling?
Take your porterhouse steak out of the fridge and let it achieve room temperature. Grilling a frozen steak is possible but takes longer to attain the desired internal temp.
Once it’s at room temperature, trim the fat and rub both surfaces of the steak with salt and pepper. I am not a big fan of spices. Plus, I believe a good steak doesn’t need much to be incredibly tasty.
Let the steak sit for an hour. Do not skip this. What happens is the salt draws out the moisture from the meat. So, you need to allow enough time for the meat to reabsorb the moisture and all that peppery goodness. If you do not have an hour to wait, salt the steak right before placing it on the grill so that the salt does not dry out the steak.
How to Prepare the Grill?
Always clean the grill before and after cooking. This way, you will not have bits of old food sticking on the metal.
You can lightly brush the grill with vegetable oil to prevent your steak from sticking to it. Personally, I simply take a piece of the discarded steak fat and use it to rub the grill.
Ensure the grill is very hot before grilling because you want a sear on both sides and a juicy meaty center.
How to Grill a Porterhouse Steak?
- Place your steak on the hot grill for 5 minutes on each side.
- If you want to achieve the crisscross char effect, turn it 90 degrees at 2 and ½ minutes. (Use a timer, do not guess).
- To check if your porterhouse steak is done, use a meat thermometer to determine the internal temperature.
After you have achieved your desired internal temperature, remove the steak from the grill and let it rest. This stage is NOT optional. You must let your steak sit for at least 10 minutes. This is just enough time for the juices to settle and redistribute within the steak making it tender and moist.
